There is a special type of chicken called the gallina criolla that would win the affection of animal rights activists.
These are the household chickens that have evolved in Costa Rica and have basically had free range since the Colonial period. Sometimes they are called patio chickens because of where they roam.
Producers say this is more healthy and keeps the birds stress-free. They are sometimes without tails and usually black with a white face or with reddish orange feathers.
